Summer Savoury Tartlettes
Combining Greek cheese and olives with a traditional English puff pastry makes for some exciting possibilities. Here are two variations on these tartlettes.

  1. Preheat the oven to 200 degrees celsius
  2. Unroll the puff pastry and cut into six rectangles. Then draw a square inside one inch away from the border taking care not to pierce through the puff pastry.
  3. Bake in the oven for 10 minutes watching that it doesn’t burn near the end.
  4. While baking, prepare the filling: slice tomatoes into halves, chop the basil, crumble feta
  5. Once the pastry is puffed and ready, remove it from the oven and carefully press down on the square in the centre leaving the four walls in tact.
  6. Elegantly arrange the tomatoes, olives and feta into the centres of the rectangles and drizzle a little olive oil on the filling.
  7. Brush the puff pastry walls with egg wash (beaten egg), and put back in the oven for 3-5 minutes to brown.
  8. Remove from the oven and top with fresh basil.

Serves 6 people.

A second variation of this recipe is to omit the olives and broccoli which results in a fresher spring taste!
